oo’mämē Moroccan Chile Crisp celebrates the traditions of the ancient medina in Fez, the culinary capitol of Morocco. We blend our own Ras el Hanout, Arabic for “head of the shop”, a proprietary blend of the best possible spices that a seller has on hand. Our unique blend relies on peppercorns, piquant red chiles, nutmeg, cinnamon, clove, ginger, anise, coriander and so much more. We leave many spices whole, delivering pops of flavors for a delightful surprise. Next, we add umami and marry with jammy figs, fragrant orange peel, sweet ginger, and crunchy sesame seeds and roasted almonds, and then infuse this exotic blend into a high-oleic sunflower oil. The result is an aromatic, robust condiment, perfectly balanced between sweet and savory, and reminiscent of the big-on-flavor-food from Morocco’s culinary capital.
oo’mämē Indian Chile Crisp Spices was conceived from our love for the fragrant spices of southern India. Often called the “land of spices”, Kerala uses indigenous spices in Ayurvedic practices holistically, including topical as well as culinary uses. For the oo’mämē Indian Chile Crisp, we carefully select from the rich array available on the southern Malabar coast, and blend turmeric, fennel, mustard seed, tamarind, star anise, reshampati peppers, Kashmiri chiles and tamarind into our own garam masala. To that backbone of chiles and pungent spices, we add a layer of umami, roasted peanuts, grated coconut and sweet papaya. One spoonful of oo’mämē will take you from basic to brilliant.
